Booger Hill Bee “Original” Honey Vinegar

We came upon the idea of Honey Vinegar by a serendipitous series of events.  While researching for another project we came across an early twentieth century manuscript extolling the virtues of Honey Vinegar.

‘Honey, of all saccharine substances, containing as it does all of the essentials for harmonious bouquet and flavour, is the one par excellence from which we might expect to produce an ideal vinegar. The result is found amply  to justify the anticipation and that its superiority in this respect will be duly appreciated by the connoisseur in salads and condiments goes with without saying, but, indeed, so marked is this distinction that I venture to think it would be readily admitted by all who gave it a trial.’

We had the finest honey; and now we perfected the art of age old honey vinegar production.  Slow, timeless and perfect with a delicate honey flavor aroma our Booger Hill Bee Original Honey Vinegar is a glorious golden color.

Just like our honey, our Honey Vinegar is raw and unfiltered. Although we don’t intentionally add the ‘vinegar mother’ , you will often find some subtle remnants of it in our Honey Vinegars. The microscopic, beneficial bacteria that produced it are still present. All of the ‘good stuff’ remains!

How is Booger Hill Bee Original Honey Vinegar Made?

We use a two step fermentation process. First we ferment the sugars in the original honey into alcohol using an anaerobic process. Then we use an aerobic fermentation process that converts the alcohol into acetic acid. We do it the natural, slow way. It takes from 6 months to a year for the complete conversion of honey into honey vinegar.

What is a “Mother”

“Mother of vinegar” is harmless and will naturally occur in vinegar products as the result of the vinegar products as the result of the vinegar bacteria itself.  The Vinegar mother forms as a gelatinous layer on the top of the vinegar solution.  Although we do not intentionally add any of the vinegar mother to our bottled vinegar, you will surely see remnants and residues from it, as our vinegar is neither filtered or heated.  All of the good stuff remains!
